Easy Chipotle Salsa
7 large Roma tomatoes, seeded and chopped
1 clove garlic, minced
1/2 cup chopped red onion
3/4 cup loosely packed fresh cilantro, coarsely chopped
1 tablespoon fresh lime juice
1 7oz can chipotle chilies in adobo sauce, chopped
1 teaspoon ground cumin
1/2 teaspoon kosher or coarse salt
In a medium bowl, combine all the ingredients and mix well. For best flavor, let salsa sit at room temperature 30 minutes before serving.
